Investigate uidmap/gidmap for podman

Running as root while retaining the same uid and gid as the host user can solve some problems like making directories in nix store when trying to mount a specific nix store files.

The error we are trying to solve is:

Error: OCI runtime error: crun: mkdir `/nix/store/6v5vc5xz34729q8v038cf0bm61d4147f-base-system`: Read-only file system
Error: Podman container exited with status: exit status: 126
