You need to put the messages you want to change into an object with the language name you want to change them for, as shown in the example with english and russian on the wiki page.

I copied everything from english.json into the "english" object in my customlang.json as well and it loads properly:

Yes, because that part is hard coded and not in the language strings, you cannot remove it.

You cannot change or remove the about command, it was explicitly designed so people don't remove credit to the person who spent 1000+ hours creating a program that is available free of charge.
