Add ACCESS-OM3 to "Debugging a Model" section

Leaving myself a note.

ACCESS-NRI/ACCESS-OM3#209 includes -g for all components, so debugging information is available.

Add to docs how to run ACCESS-OM3 with debugger

• (optional) add -O0 to fflags/cflags in spack.yaml

1. build with spack install --keep-stage
2. use a config with <256 cores

Why do the instructions say to set openmpi@4.1.3 ?

Or is this a minimum version ?

Compatibility with the 'linaro-forge' tool- we had issues with more recent versions of MPI

I've been running it with openmpi@4.1.7 just fine, does openmpi5 not work ?

I think @SeanBryan51 might have mentioned it in his Linaro skillshare a while back, I just found it temperamental- it would consistently work with openmpi/4.1.3, but some builds wouldn't with openmpi/4.1.7? Couldn't work out what was triggering the problems
