Set -grecord-gcc-switches

It seems like setting grecord-gcc-switches provides useful information, should we make that the default:

We need to set -debug -g -grecord-gcc-switches but I don't know what levels of debug / g are needed.

Not that I am aware of, other than the binaries being a tad bigger. Might also be worthwhile adding a CI step that uses readelf on the binary and prints the debug_str section (see this)
