Add instructions for running with custom datasets

It would be very helpful if the README included guidance on how to run the system with a custom dataset. Specifically:

• Which configuration files or parameters need to be modified for new input data.
• Common pitfalls or issues to watch out for when adapting a dataset.

This would make it much easier for new users to get started quickly with their own data.

I also agree it would be nice, but took me like 10min with the help of ChatGPT to figure out how to do it ;)
