What gives? There's no errors in the console saying anything is amiss.

also, like a lot of others, getting that orange spinning block where dropdown of checkpoints would be and in settings.

Reinstalling does nothing, you will just get the last update again.
You need to manually rollback to an earlier version.
Open git, go to your installation folder for stable diffusion so it says for example: C:\AI\stable-diffusion-webui
then type "git checkout a9fed7c" without the ". Then it will switch to the last version before the update from yesterday that works fine.
Then when you start the launcher turn off automatic updates or it will just install the update again right away.
