Migrates tests from PHPUnit to Pest

Replaces PHPUnit with Pest for testing.

This change enhances test writing experience, improves
readability, and simplifies test structure by adopting
Pest's expressive syntax.

Updates CI workflow and composer dependencies to reflect
the migration to Pest.
