Sync version files to 0.1.0 (#77)

Updates .bumpversion.cfg, docs/conf.py, and src/datapilot/__init__.py
to match the version in setup.py (0.1.0) from the Pydantic v2 upgrade.

This ensures all version references are consistent for the next
bump2version command.
