[Docs] Replace Bitnami Kafka Helm chart with free SolDevelo alternative #1229

Hi team!
I noticed that deploy/helm/README.md and install.sh instruct users to install the bitnami/kafka Helm chart. Since the Bitnami catalog is now largely behind a paywall, the public charts can be outdated or hard to access.
Proposed Solution I suggest switching to the SolDevelo Kafka Helm Chart (maintained by my team). It is a production-ready chart, so it maintains high compatibility, but it is free to use, hosted as a modern OCI artifact, and supports Kafka 4.0 with KRaft.
The installation is straightforward:
helm install my-release oci://registry-1.docker.io/soldevelo/kafka-chart --version 32.4.4
