Update documentation from HED-BOT to HEDit

Update all documentation files to reflect the rebrand from HED-BOT to HEDit and the migration to Annotation Garden infrastructure.

Changes Required

For each file:

1. Replace "HED-BOT" with "HEDit"
2. Replace "hed-bot" with "hedit" (for paths, URLs, container names)
3. Update GitHub URLs from neuromechanist/hed-bot to Annotation-Garden/hedit
4. Update API URLs from hedtools.org/hed-bot-api to api.annotation.garden/hedit
5. Update frontend URLs from hed-bot.pages.dev to hedit.pages.dev
6. Update Docker image references from hed-bot to hedit
7. Update conda environment references from hed-bot to hedit

Notes

• This is a follow-up to PR Rebrand from hed-bot to HEDit and migrate to annotation.garden #44 which updated all code references
• Documentation updates can be done after the repository is transferred to Annotation-Garden org
• Some URLs may need to wait until the new infrastructure is fully deployed
