Clean up shell scripts

Use shellcheck and clean up the warnings reported. Also, try to bring them into posix compatibility.

Are you referring to the RPM scripts?

• post.sh
• postun.sh
• pre.sh
• preun.sh

The only other .sh scripts are the jdk-wrapper.sh (which should be posix, and is externally maintained) and start-kafka.sh used by our test Kafka docker image (not sure I care enough about that to invest into it).
