Fix Cypress E2E tests and Add to Github Actions CI

Problem

The Cypress E2E tests fail. They fell into disrepair because they're not run by the CI.

Solution

1. Fix the Cypress E2E tests.
2. Run them on each push in the Github Actions CI.
