Broken readme links AND more intuitive folder names

Currently, all of the .html links in the READMEs point to the old recipes page, which was recently renamed to appetisers, mains, local dishes. This is easy to fix, but I suggest that these folders be re-named to make them intuitive.

Suggestion:

folders and .html files are simply named easy, advanced, regional-modelling, and we keep the humourous 'appetisers' , 'mains' in the README file only, e.g. appetisers (easy), mains (advanced)

I thought we were proposing names as follows:

03-Advanced-Mains
02-Easy-Appetisers
01-Tutorials-Cooking-Lessons
etc

i.e. keep the cooking-themed names, but add explanations at the start that might help those from different cultural/linguistic backgrounds.

I really like the cooking branding; I don't think it's confusing. Yes it's not straight forward but also "Easy" is not self-explanatory.
We explain the cooking analogy though in the docs and the README.

How about:

01-Cooking-Lessons-101_(Tutorials)
02-Appetisers_(Easy)
03-Mains_(Advanced)
04-Local-Dishes_(Regional)

Just want to say that #606 took me 2-3hrs of work. So let's please converge with something we are happy before we do PRs renaming things. I thought we had that convergence... perhaps I didn't follow what was the proposal? Anyway, I am not complaining here, but I just want to clarify that it's not a simple "File > Rename ... " thing. Because there are links in several pages and then the docs config files need to be pointed to the new files.

Do we really need to rename anything? Let's keep current state and put effort in all other issues?

@navidcy Yes I think we need to rename things because the folder names as are not intuitive. People landing on the repo should be able to navigate easily, and I think this just creates a barrier. People often just skim READMEs when perusing github so could easily miss the explanations.

I know it's not as simple as only renaming the files, but by the same token we probably should have made sure there was broad consensus before renaming things the first time around.

I prefer @adele-morrison 's suggestion because having brackets in folder names is a pain on a terminal you need slashes or quotes.

However, even using dashes to connect the joke names to the real names, "regional-local-dishes" is still confusing to me, as if you read those three words together it doesn't really make sense unless you know that "local dishes" is a joke name and "regional" is short for "regional modelling". I'd vote for Adele's suggestion plus "04-regional-model-specials" or something a bit clearer.
