CI: include more dependencies dev versions

lsdb version update caused some unexpected issues for the fornax notebooks, I suppose we should add lsdb/hats maybe even nested-pandas to the devdeps job -- though it won't be useful if API is breaking without deprecation warnings, yet those are fast moving pieces of our dependencies thus would be wise to test with their dev versions.
