Automate release via release-plz #405
Description
Issue summary
Right now we have a pretty manual process of publishing a new release:
- We make a PR ourselves for the release changes.
- Once merged, we need to click in the UI to create a release.
- Then a housemade script is invoked to tackle with dependencies (perhaps not in an optimal way)
- Any issues might need to be manually fixed.
This could be made easier via https://release-plz.dev/ as introduced in another repository with multiple packages via ChainSafe/rust-f3#33
