NFT RPC Transaction amount incorrect. Balance locked

I tried to mint an nft with the following rpc:

I gradually increased the fee in 3 transactions since they all are astuck on pending. However, the fee does not seem to apply properly. All Transactions are stuck, now my balance is locked:

I would require help on the following topics:

• how to unlock my balance by either increasing fee (updating the transaction) or remove the transaction from mempool
• how to properly create the NFT minting rpc
• what is the recommended transaction fee or an apropriate value to get the minting through in less than 30 Minutes

update:
the first transaction went through now (4 hours)
id still be very glad if someone could help me out how to properly set a fee and if possible how to update/increase a transactions fee
