fix: Fix test issues and remove simulation-based tests

- Remove simulation-based edge_cases test that doesn't test real functionality
- Fix OllamaModel initialization in tests
- Update conftest.py to properly skip when no models available
- Fix test hanging issues by ensuring proper API key checks
