Remove enchanted theme and simplify homepage

Delete the enchanted theme assets (enchanted.css and sparkles.js) and remove related references. Simplify docs/index.md content (streamlined hero/intro, navigation links, quick example commands — switched example to PostgreSQL usage) and update mkdocs.yml to drop palette, extra_css and extra_javascript entries. Regenerated site HTML was updated to remove palette controls, enchanted styles/scripts, and adjust anchors/navigation to match the new homepage structure.
