Custom image with new Timescaledb version

Dear crunchy team,

Thanks a lot for the awesome stuff you guys do.

Timescale 2.8.1 offers some very useful features that we would like to use.

I would like to extend the docker image and add tstune (from timescale) and the latest version of the timescale extension.

I image i can use the postgres Dockerfile to make some changes but im at a bit of a loss as to what arguments should be passed.

Is there some documentation on the subject. Some best practices for enhancing the images?
