Should we just use GitHub Wiki?
Django-Ninja gives us Swagger UI documentation... should we just use that? How do we add to what is automatically generated?
We want to be able to document API endpoints for issue #12 so let's figure this out quickly
NB this is for developer documentation not product documentation for end-users
