Add option to install Proton-GE as latest-only

The proton-ge package from AUR does the following patches:

It makes both the internal and display name as Proton-GE only. This makes it so we only have to update the Proton version without always re-selecting a new global version and per-app versions when updating.

Could you make an option on ProtonUp-Qt where it always install the latest Proton-GE with such sed patches?

(The folder name would be "Proton-GE" or "Proton-GE_Latest" as to avoid conflicts with normal, versioned folders.)
