Move config guides into spine/config/ package

- Created comprehensive README.md in src/spine/config/
- Integrated METADATA_GUIDE.md and REMOVING_KEYS_EXAMPLE.md content
- Removed old guide files from repository root
- README now covers all config features: composition, overrides, metadata, compatibility
