SASL-support is documented for LdapRecord core but not mentioned for the Laravel version?
Is SASL supported in the Laravel version?

Yes absolutely -- the option is present in the published configuration file:

LdapRecord-Laravel/config/ldap.php

Line 40 in 7bd279f

'use_sasl' => env('LDAP_SASL', false),

And the option is shown in the LdapRecord-Laravel docs:
