Link with EarthCODE's STAC examples

EarthCODE currently has some tutorials on how to create STAC metadata (https://esa-earthcode.github.io/tutorials/index-1/) for products. This issue is a discussion to see if and how we can link to this documentation from APEx to avoid duplicate efforts.

• The team noted that many projects lack proper STAC metadata and discussed providing guidelines or linking to existing EarthCODE tutorials to help users generate compliant metadata.
• @jdries suggested that open-source tools, such as those developed at VITO, could automate STAC catalogue creation, and that sponsorship from EOEPCA could support broader adoption.
• @Patrick1G highlighted the need to update requirements for EOEPCA, APEx, and EarthCODE to reflect current needs, including metadata completeness and integrity checks.
• The group agreed to review and potentially align documentation and tutorials across projects to ensure consistent guidance for users.
