ReadTheDocs Latest build fails due to multiple PDF-LaTeX files built

After #3914 RTD now builds multiple PDF-LaTeX files at the last step - only for the Latest type of doc build, since that's the only one we build tex files in, and consequently complains only one file is permitted.

here is a very similar issue to ours readthedocs/readthedocs.org#10661 - and we actually have multiple pdfs, including the logo

Thanks, I've tried to look into this, and not sure why there'd be multiple. I think it would be in the output build folder when it creates it i.e. home/docs/checkouts/readthedocs.org/user_builds/esmvaltool/checkouts/latest/_readthedocs/pdf/
I tried to run the build on my machine locally though without the gallery probably because of my environment, and there was only 1 pdf in the output folder. I did have to remove the .svg from the recipe_runoff_et.rst as my latex couldn't make that.
Like @lukruh mentioned it could be the changes in the doc tree, its making all the subheadings in the index page a higher heirarchy (/part) than everything else. This happened to the esmvalcore pdf as well but that built fine. Either way, I can try to get that changed.

thanks for looking into this @flicj191 🍺 Prob best approach would be if you could reproduce the pdftex build locally, using the command from RTD, and see what pdfs it spews - note that pdflatex is a monster that needs to install something like 800 packages, am trying to stay away from that unless absolutely necessary 😁
