Converting @Elsa-Health -> Workflow Pattern

Converting the @Elsa-Health/mammoth codebase to be more modular following a Workflow pattern, that way, certain parts of the code are properly reusable.

At start, this will take time of Engineering team because of the need to convert the code base. But would ultimately make the development to follow relatively quick.
