I repackaged jackson in jmod format

You need to include the Jackson license and notice. You can use a new license for your code but you can't ignore the Jackson license and notice.

i should mention it more in README.md or add seprate file containing your license?

Just mention it is Apache licensed. Should be enough. Possibly also add a comment in the Makefile about Jackson having Apache license.

also i copied the license from jackson-core repo
and i guess these must be changed with real values: Copyright [yyyy] [name of copyright owner]
am i wrong?

No, don't change the Jackson license. That footer is an appendix with sample text
