Fix broken xemu repository reference

- Update from obsolete mborgerson/xemu to current xemu-project/xemu
- Repository was moved to the official xemu-project organization
- Latest release v0.8.95 with xemu-win-release.zip is now accessible
- This should fix the failing GitHub Actions URL validation
