Fix/Remove count labels from filters

A request from today review meeting with Pierre:

filters and search behaviour works nice, but the numbers on the filters not changing on filters selection are confusing.

Please remove the count labels from the sidebar filters;
it is enough to keep the count of results on top of the page ("# datasets")

Do we still want some of them to be sorted by count, or will that be confusing with the count labels missing? I could also work on getting the filter counts to update based on all applied filters.

What would be the time cost of implementing all-applied filters counts?

I'd give it a try to see if we can make the filter counts behave dynamically before opting for removing them altogether.

I think 4-6 hours including testing. This fix would also set us up to do #57 more quickly, since that work also depends on implementing reactive UI with a framework like Alpinejs. Here's some documentation here that I would use: https://alpinejs.dev/start-here#building-a-search-input
