Pipeline/Infrastructure - Generate Simplified Antarctica & Australia Polygons for Subscriptions

Currently, the Australian and Antarctic polygons used to define our regions of interest are complicates shapes.

• Australia -> a complex polygon
• Antarctica -> A multipolgon either side of the antimeridian.

We wish to simplify these shapefiles for our subscriptions and processing. Ideally:

• Australia becomes a simpler polygon.
• Antarctica becomes a Polygon

To test, run STAC queries to https://browser.stac.dataspace.copernicus.eu/collections/sentinel-1-slc for sentinel-1 IW scenes. The same scenes should be returned for the old and new polygons
