Current setup seems incompatible with python 3.12 and newer

In the latest test run, here: https://github.com/GranthamImperial/silicone/actions/runs/17557313148/job/49864675806 and here: https://github.com/GranthamImperial/silicone/actions/runs/17557313148/job/49864675812, we fail at the package installation stage.
