So far I been trying to set the "Payara Server tools in VSCode" plugin but the "Auto Deploy" and the "Hot Reload" features just end in errors with my current configuration. If anyone gets this working please share with us your knowledge 😄.

So far the workaround for my development environment so far is:

Payara Server tools in VSCode Setup

Click the + icon and select Remote Domain from the top-center menu.
Select Default (I am not using the Docker option at this time)
Type a name for the server.
Type domain1 on the domain option
Type localhost on the host name
Select yes for the default ports (unless you have changed them)
Select no for default users
Type admin as user and admin1 as password
You should be able to connect to Payara if your container is working

Using Payara Server tools in VSCode and deploy

Assuming your containers are running you can connect to the server by clicking the connect button on the Payara plugin, and then right-click and un-deploy, or you can go to the admin console and un-deploy the application.
After that you can build your project, I do mvn -DskipTests=true package
Go to the folder view and search for the dataverse-6.0.war under the target directory
Right click and select "Run on Payara server
(Optional) You can download the Docker plugin and see when the application is ready on the console

Keep in mind that according to the documentation "The Hot Deploy feature is in technical preview."
