Replace `DocLoggingCallback` with bluesky standard `JsonWriter`

Since we implemented a DocLoggingCallback, roughly equivalent functionality got added to bluesky itself in bluesky/bluesky@9c2b651 .

We should see whether we can replace our version with the standard version (or a wrapper around the standard version).

Hmm actually we might not be able to use upstream directly - we use orjson to get support for writing arrays. I wonder if upstream would accept an orjson (or similar lib) dependency...
