Local demo-/dev-setup with two connectors

As mentioned in the last JFX by someone else a demo-/dev-setup with two connectors is currently not available in the main-repo. Fortunately it was pretty easy to create. Maybe we at Tributech are not the only one which need such a setup.

Feel free to clone
DataspaceConnector demo

Start the demo-setup:
docker-compose -f docker-compose-provider-consumer.yml up -d

Connector A (e.g. Provider) OAS Swagger-API reachable at:
http://localhost:8081/admin/swagger-ui/index.html?configUrl=/v3/api-docs/swagger-config

Connector B (e.g. Consumer) OAS Swagger-API reachable at:
http://localhost:8082/admin/swagger-ui/index.html?configUrl=/v3/api-docs/swagger-config
