Allow axis offsets

It would be really helpful to be able to hard-code x and y carriage offsets, as my drag knife doesn't sit in the same position as my extruder, which puts everything off-axis.

I do have that planned, but for now setting up the offsets in your firmware (or better, creating a cutting profile in Klipper) should work

I've checked out your Klipper Profile documentation, very nicely documented, but I can't quite understand why you forego bed meshing with the BLTouch rather than just having a different z-offset in that profile? In my head, having a bed mesh to compensate for minor imperfections in the bed surface would help, not hinder?

It could help, but the idea is that the knife itself should be under some spring tension from whatever mount you're using, so the mesh is less useful unless your bed is massively warped.

For example, my knife mount has a vertical spring distance of ~8mm, far greater than any variance the mesh would account for

I think target audience for cutting on a printer is guys that have old Marlin printer that isn't that useful anymore as printer but is ok for cutting vinyl or whatever. In this case setting offsets in gcode is more user friendly since reflashing marlin each time is kinda cumbersome. Klipper make life easier for sure :)
