Check if UUID is stable over full refresh

We need a way to uniquely identify incoming rows, I'm using DuckDB's `uuid` function but not sure if that will be stable over full refreshes of the base models, should run some experiments 

It's probably fine if it's not stable, people shouldn't really be using this field much, just kinda curious
