[3.13] AI Gateway - Update documentation for advanced text generation features #3349

In 3.13 we're expanding support for Advanced text generation across multiple modes and providers: Update ai-proxy and ai-proxy-advanced provider feature matrix (“Advanced Text Generation” sections) and examples to cover:
- Support for /batch requests across all providers (including Gemini)
- Streaming and function calling across providers
- Gemini WebSocket usage
- Azure OpenAI Responses API (v1)
- Anthropic Messages API
Definition of done
- Provider capabilities table updated in AI Proxy and AI Proxy Advanced
- New plugin examples for AI Proxy and AI Proxy Advanced include:
- Batch calls
- Function calling
- Streaming
- Gemini WebSocket
- Azure Responses API
- Anthropic Messages API
