Difficulty building learning curves

Hi!
I need to predict time series using a convolutional neural network. To this end, I'm replicating the "Demand forecasting with the Temporal Fusion Transformer" tutorial. Also, I'm trying to build learning curves to analyze the evolution of the values of training and validation errors. However, I am having difficulty plotting these curves.

Can someone help me?
