In the web UI, it would be nice to be able to create folders with a poster to organize titles.

I have plans for this (and game metadata) on Sunshine's side, not sure about Moonlight side though.

In fact, I just added external ids (steam, epic, etc.) to our game db so we can work towards the metadata part. LizardByte/GameDB#173

Oh yeah, I forgot moonlight is not part of this project. Do you guys have plans to fork your own client? Nice about the metadata too, it would be cool if in the web UI you could scan respective clients for installed games or specific folders to find games so you don't have to manually add them

No; however the primary Moonlight maintainer is also a maintainer here on Sunshine so we can have good communication between the projects. It's just a little bit harder to implement new features on Moonlight because it has to propagate to all the client repos. It might be easier if there was a single client repo using a mulitplatform approach, but I don't know how much effort that would take to get working properly.
