Add back 11 missing clients that were lost during merge

During the merge conflict resolution, these clients were accidentally removed:
- ECA
- Jenova
- JetBrains Junie
- LM-Kit.NET
- MCP Bundler for MacOS
- MCPJam
- Mistral AI: Le Chat
- Needle
- Simtheory
- Smithery Playground
- Swarms

All clients have been re-added in alphabetical order with the Instructions
column (set to ❓ for unknown support status, matching the pattern for other
clients where support is not yet documented).
