Add instructions in the docs how to build vesin in local editable mode

Hello I am trying to build vesin locally,

unfortuantely my pip isntalls, even with

pip install --no-deps --no-build-isolation --check-build-dependencies break do to a missmatch in setuptools versions:

ERROR: Some build dependencies for file:///Users/matthiaskellner/Documents/PhD/packages/vesin/python/vesin conflict with the backend dependencies: setuptools==70.2.0 is incompatible with setuptools >=77.

It would be great if you could add some instructions how to make local editable builds of vesin

Did you try updating setuptools?

Also, is there a reason why you need to do editable builds? For local install pip install . should be enough.
