Update library to be compatible with Python 3.14

• Check if all dependencies are compatible with Python 3.14 and have releases for every OS ready
• Change GitHub actions to use new version
• Update version matrix in documentation

RDKit and SciPy are working with 3.14, probably the main blocker now is cloudpickle, used by Joblib: cloudpipe/cloudpickle#585
