Support additional LaTeX delimiters

It would be nice to support using \(...\) for inline math and \[...\] for block math. These are the preferred delimiters used by mathpix markdown and LLM tend to produce those instead of $ and $$.

Thanks for the suggestion. I would love to add the support, but it seems the package I use (vscode-markdown-it-katex) doesn't support it.

There's an issue opened for that microsoft/vscode-markdown-it-katex#22.
