my mom need help with quick assist proof.

my mom was connecting to quick assist with me before a online test. shes in her 60s. i disconnected but she did not check the x (close) on the quick assist so i cannot use event viewer application as proof she didnt cheat. How do i get the proof that there was no one connected to quick assist and connected to me at a certain time. can i use a log, an event viewer log, a program built into windows... the test was on nov 1. so far i have reached out to windows they said theres a 3 day period that they keep logs on quick assist then they delete them. i am planning on using win+g to screen record the solution so they cant say i used paint or anything. i dont think the computer police would care (like NSA) unless it is a lawsuit demanding info. please and thank you.
