Some improvements based on August 2025 workshop experience

Add `devtools` to list of packages to install

Windows Users had a lot of trouble untarring the data - caused quite a bit of trouble with getting the workshop going - needs to be debugged. Also important that the workshop organisers ask attendees to make sure that they have both packages and data prepared beforehand 😅
