Update to support pydantic v2

Note: This is specific to ngen branch

• ngen branch currently uses pydantic1 as one of its dependencies
• To avoid accumulating technical debt, it'll be useful to update the source code to migrate to pydantic2
• An official migration guide is available at https://docs.pydantic.dev/latest/migration/

I will be working on this as per specified guidelines.

Hey @fbaig I didn't see your issue and completed the migration on the CIROH-UA fork of t-route here: CIROH-UA#4

Would appreciate an extra set of eyes on it in case I missed something
