[P2-T3] Split & Version Processed Data

- **Description:** Split the processed data into training and testing sets. Use stratified sampling to maintain the class distribution. Version the final, processed datasets using DVC.
- **Acceptance Criteria:** `X_train`, `y_train`, `X_test`, `y_test` are created and saved to `data/processed/`. The state is tracked with `dvc`.
