Dumping/Editing my own ROM #1

Hey there,
I have a Ticwatch E3 and would like to dump my own ROM for a backup instead of using the one on your website. Can you give me a bit of insight to help me do this?
Also I am wanting to create my own custom rom for my Ticwatch. How do I edit the dumped ROM? (Because obviously I can't compile my own from the source code since WearOS is closed source.)
p.s I am not wanting to make any major changes for my own custom ROM. (Just change some text, uninstall a few stock apps and disable OTA updates)
