chore: release v0.3.1 - update author attribution, org migration, and cleanup

- Update author to Idris Olubisi with Midnight Network as contributor
- Migrate repository references from Olanetsoft to midnightntwrk organization
- Update Discord link to official https://discord.com/invite/midnightnetwork
- Remove test directories and old release notes
- Update .gitignore to exclude future test directories
