Make Schema Registry Subjects configurable. Not ${topic}-(key|value) #2
Description
Add a property like dest.schema.registry.subject.strategy.class to override the current TopicNameStrategy (which is responsible for adding -key and -value to the end of the topic for the registry subjects).
The src registry doesn't need it because we lookup /schemas/:id directly.
